Sausage Sizzles

Sausage sizzles are a popular fundraising event for community and charity organisations. They are regularly seen located in front of shops and in car parks etc and consist of a barbeque and trestle tables.

By taking some simple food safety precautions, and selling only freshly cooked food straight from the barbecue, the food should be safe to eat.

  1. Pack raw sausages into insulated boxes with ice bricks.

  2. Handle food with tongs or other equipment. Use separate equipment to handle raw and cooked meats. Hands should not be used unless absolutely necessary.

  3. Hands must be washed after handling raw meats, money, cleaning equipment etc.

  4. Provide hand washing facilities which consist of liquid soap, disposable hand towels, basin/tub, and a supply of running water, i.e. 20 litre drum with tap. Hand washing is not permitted in a tub filled with water.

  5. Keep cooked sausages separate from raw sausages at all times to prevent contamination.

  6. Keep raw sausages away from buns.

  7. Cover food to protect it from contamination, i.e. insect, dust.

  8. Use clean and dry utensils for serving the food. Never place cooked sausages back on the trays that held the raw sausages.

  9. Provide a wash basin with hot running water, detergent and a cleaning cloth for washing utensils etc.

  10. Cook sausages until juices run clear.

  11. Ensure all food handlers are wearing clean clothing and hair covering i.e. hairnet, hat.

  12. Ensure all high risk foods such as sausages, cheese etc, are kept below 5°C or above 60°C at all times.

  13. Provide a thermometer at the stall to check temperatures of the high-risk foods throughout the day.
